Easy Cheesy Egg Cups

Surely I’m not the only one whose toddler wakes up HUNGRY! I try to get some things prepared before getting him out of bed, but if I know he’s awake I’ll get him up. Getting up extra early to make food is…well, insane…and out of the question.

I decided to spend a day making a big batch of food, that way all I need to do is reheat/defrost for a super quick breakfast!

Depending on which fillings you put in these cups, they can be pretty cheap. I happened to get these pasture-raised eggs for $2.49, which is a really good price! I can’t afford these all the time, but read this post over at 100 Days of Real Food if you are interested in learning why I prefer them.

Easy Cheesy Egg Cups

The recipe is very simple and very versatile. You can use whatever type of eggs, milk, and fillings you want. Pop them in the fridge for a ready-to-go breakfast, or freeze them for later enjoyment! If you freeze them, just make sure you wrap each egg cup in plastic wrap before putting in a freezer bag.

Instructions
  1. Preheat the oven to 350 and grease a 12-cup muffin tin.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper. Set aside and get your fillings ready.

  3. Evenly distribute fillings among muffin cups.

  4. Pour about 1/4 cup of egg mixture over fillings, and top with parsley.

  5. Bake for 20-25 minutes, or until eggs have set. Cool for 5 minutes, then remove from the tin to cool completely.

You can easily add/substitute other fillings in this recipe. Ideas include: ham, peppers, green onion, and sausage.
